Questions re English records pre-1841

I am new to English research but have 30+ yrs doing Mexico genealogy. I see that the 1841 census was England's first. So does that mean that searching for ancestors before 1841 will depend mostly on church records and if so, what percent of these English church records have been "extracted" for the IGI by LDS?

Are most English church records on microfilm or just half or?

What is one to think of a family (1795-1841) that doesn't stay in one spot over the years ie in Yorkshire? Didn't English rural families stay put for generations?
