I can speak a bit to the Norwegian resources -
There are two good basic database collections for Norwegian censuses, etc.

Of course, most of the actual data will have been recorded in Norwegian so keep these bookmarks handy -

There are many free Norwegian resources available online - I like to keep an eye on the collection of links at Cyndi's List under the topic Norway.
