I can speak a bit to the Norwegian resources -
There are two good basic database collections for Norwegian censuses, etc.
http://digitalarkivet.uib.no/cgi-win/WebFront.exe?slag=vis&a... (click on the English option)
http://www.rhd.uit.no/indexeng.html
Of course, most of the actual data will have been recorded in Norwegian so keep these bookmarks handy -

http://homepages.rootsweb.com/~norway/na17.html
http://www.familysearch.org/Eng/Search/Rg/frameset_rg.asp?De...
There are many free Norwegian resources available online - I like to keep an eye on the collection of links at Cyndi's List under the topic Norway.
My favorite website for "how-to" advice seeking Norwegian ancestors - http://homepages.rootsweb.com/~norway/articles.html
